About Irene
Hello! My name is Irene and I have been a vegetarian for a decade now!
I was born and raised in romantic Rome, but my family is from southern Italy, so I grew up eating - and then cooking myself - incredibly delicious meals, made of fresh ingredients and packed with flavour and lots of nutrients!

My lessons will be structured in three sections: first, we will dive into the history of the dish, its popularity, and possible regional variations, a rapid detour on its nutritional value. We will also evaluate if we want to follow the tradition, or have an even healthier twist. Then we will proceed with the proper preparation of the dish (YAY!), explaining the main techniques. I'll give you useful tips, that I have learned over the years!
