I emphasize students understanding of 3d space and form. I like to relate 3d modelling to real world architectural drafting, and encourage the student to break down models into simpler components. For organic modelling specifically I recommend beginning with lower polycount model and gradually introducing more detail, rather than trying to replicate all the subtleties of a shape on the fly while working. This also helps to create proper topology and edge flow.
